Apple Harvest Oatmeal Bread

If you did a happy dance when you flipped your calendar page this morning like I did and are looking forward to fall, then you are going to love what I have to share with you today!  I have a fun cookbook giveaway, and our shop is having a sale that you are not going to want to miss! But first, you are going to love a quick and tasty bread recipe!  Our oldest daughter made two loaves last night and there was not much left after breakfast this morning!  It is super yummy!

Apple Harvest Oatmeal Bread

2 c. all purpose flour

1 c. old-fashioned oats

1/4 tsp. salt

21/2 tsp. cinnamon

2 tsp. baking powder

1 c. sugar

3/4 c. vegetable oil (we used coconut oil)

2 eggs beaten

1/2 c. plain nonfat Greek yogurt

1 c. applesauce (chunky homemade is best!)

1/2 tsp. vanilla extract (use our homemade recipe HERE)

Preheat oven to 350 degrees.  In a large bowl combine flour, oats, salt, cinnamon, and baking powder.  In a stand mixer combine sugar, oil, eggs, yogurt, applesauce, and vanilla. Fold into the dry ingredients until just combined. Pour batter into a greased loaf pan. Bake 45-55 minutes until a knife is inserted in the middle and it comes out clean. Remove from the oven and let it cool for 5 minutes.  Turn out onto a cooling rack to cool for 30 minutes…if you can resist the temptation!

Your house will smell wonderful and better than any candle you can find!

Carmen is the love of her teacher/pastor husband of 20 years, and mother of 9 semi-picky eaters ages 18 to 11 months.
