Granola is one of my favorite breakfast foods to serve to my family. It’s filling, nutritious, delicious, and it’s ready first thing in the morning. All wonderful qualities in a breakfast food, especially on busy mornings! Recently I have been experimenting with my usual recipe, adding in different fruits and nuts, and this variation is by far my family’s favorite!
3 cups oats
1 cup almonds
1 cup cashews
1/2 cup pecans
1 cup blueberries
1/2 cup(or 1 stick butter) melted
3/4 cup honey
1 tsp salt
1 tsp cinnamon
1 tsp vanilla
Stir oats, nuts, salt, and cinnamon together. Melt butter and honey together, then pour over oat mixture. Stir in vanilla and blueberries. Make sure everything is coated nicely with honey and butter. Bake at 250 degrees for 2 hours on a greased cookie tray or 9×13 pan. When you wake up in the morning enjoy a delicious breakfast that’s ready to go!
