How to Host a Friendship Tea – Part 2 (Yummy Recipes) – Christian Homemaking

Recently we shared directions on How to Host a Friendship Tea and promised we would share some recipes. Today we are sharing Apricot Tea Scones and Creamy Filled Strawberries.

APRICOT TEA SCONES

3 cups all purpose flour

1 cup sugar

1 teaspoon salt

3 teaspoon baking powder

1 stick cold butter

2 eggs beaten

1 cup light cream

1 cup dried apricots (finely chopped)

1.Preheat oven to 400 degrees.

2. In large bowl, mix dry ingredients.

3. Cut cold butter into flour mixture until crumbly.

4. In small bowl miss eggs and cream then blend into dry ingredients.

5. Knead dough on floured surface adding apricots.

6. Pat to 1 inch thick and cut with biscuit cutter and arrange on baking sheet.

Bake for 20 minutes until you have a clean toothpick.

Serve with whipped cream and apricot jam. 

CREAMY FILLED STRAWBERRIES

24 large fresh strawberries

1 cup cold milk

1 package instant vanilla pudding mix

1/2 teaspoon vanilla extract

2 cups whipped topping

1.Rinse berries and pat dry with paper towel.

2. Trim stems and white tops from berries and use petite melon-baller to scoop out flesh.

3. In a small bowl beat pudding mix and milk for 2 minutes. Fold in vanilla and whipped topping.

4 Spoon pudding mixture into a pastry bag (or use plastic bag and cut a small opening in the corner). Pipe pudding mixture into each strawberry.

5. Arrange them on a pretty serving platter on their sides and chill at least 2 hours before serving. Makes 2 dozen.
