I never realized how much of an impact our kids growing up and moving away would have on our life. Gone are the days of dropping off and picking up kids, helping them with their homework, and making sure everything is right in their worlds. Also gone are the family meals that we always enjoyed together, replaced by quiet, simpler meals alone with my husband. We all had our favorites, but this banana bread was loved by us all. I always try to make it as a special treat for our kids when they come for a visit. This is the most delicious and moist banana bread we have ever had so it is the only one I make. 3 1/2 cups flour
1 1/3 cup sugar
2/3 cup oil
4 eggs
4 tsp. baking powder
2 cups mashed banana
1 cup walnuts or pecans (if desired)
- Start by combining all of the dry ingredients except the nuts in a large mixing bowl.
- Next add the wet ingredients and mix well.
- If you are adding walnuts or pecans mix them in after combining the other ingredients.
- Preheat your oven to 350.
- Lightly grease two 9” x 5” loaf pans with vegetable oil or cooking spray.
- Divide the batter evenly into the two greased loaf pans.
- Bake at 350 for 55 minutes or until browned and a toothpick inserted in the middle of the loaf comes out clean.
- Let the loaves rest on a cooling rack for 15 minutes before removing the loaves from the pans.
